Can someone explain to me the relevance of the side story with the two other couples? How is it suppose to relate to Miriam and Tony's story?
It doesn't, it's just a movie which has two substories.

There are tons of movies with multiple substories.
Well, the graphic novel this story is based on is actually just a simple tale about a blind girl's daily life (minus the romance and stuff) when she's traveling via underground trains (and of course, the fantasy sequences that are her point of views).
Although the movie did try to expand on it by turning it into a love story, it's still too short to be an entire movie, so they tossed in another story as well with rather similar theme.
