For athletics you should pick the ones who are gifted athletically. Xiao Feng would be my #1 draft pick coz he can do it all.

Xu Zhu for jumping and Duan Yu for running because he won't get tired nor will he be slow.

Archery ..Guo Jing

Fencing...Dugu or Ling Hu Chong
