For the Chinese-illiterate who use Firefox, here's a useful add-on. Highlight a bit of text you want translated, and it opens up a new tab with the Google translation. You can use all parts of the Google translation service, which means you can translate to and from Spanish, French, etc. While you can already do this with translation services such as Google and Altavista Babelfish, this is a one-click solution. As a bonus, once you've selected a language translation, it remains the default until you change it again. Which means even fewer clicks and menus.
