That is one of the high points from my year in Houston. The engineering firm I was loaned out to even had a crawfish boil in the company parking lot. Heaps of very spicy sauced crawfish, corn on the cob, boiled potatoes and cold beer. I'm drooling at the memory.

There is a variety wild Crayfish in the rivers and lakes near here. They're not the same variety as those farmed in the southern US. They've only become common here in the past few years and I have heard people who claim to trap and eat them. I'm going to have to try it for myself. It's also fresh local corn season.

Having lunch right now is the only thing that's going to stop my mouth from watering.

Crawfish is best with mayo! If you don't mind a little fat, add a little butter and some cajun powder

one of my old college profs once told me that he likes to catch a bunch of them and keep them in a bucket for weeks. after a while, the big ones will start eating the little ones... starting with the eyes.

Correction: I ate crabs last night because all they have is frozen crawfish right now.

I used to go to Cajun Corner but stopped a few years ago because of change in ownership and the service was bad. Cajun Kitchen does have bad parking and I don't like the crowd there.

Now I go to JoLynn's and Crawfish & Noodles. JoLynn's is inside the Viet Hoa food court (in which no ones knows about ). I like it because they put a lot of garlic and the taste is very Asian-oriented. This woman and her mom run the place and they're very friendly. Crawfish & Noodles is near Kim Son on Bellaire. I go for a change in taste since their flavor is more Cajun and a bit spicier.

    Hope that helps

I have to say the best crawfish I have ever eaten was at the restaurant/bar below in Birmingham, Alabama. Simply divine!
