    zhang as in "zhangfu" (husband).

Same zhang as in guzhang/yizhang, the husband of your paternal/maternal aunt.

as far as i know, you would call him "sifu" and call your female sifu "simu" instead.

Why do people call their female teacher for sifu anyway? Wouldnt it be better and more correct if they call them simu in the first plays?

It's just the way it is - patriarchal society. Jing Yong, Gu Long, Liang Yu Sheng all use the term for both male and female teachers.

Yittz's 'shi zhang' 师丈 is correct, for the explanation given by CFT.

The other (lesser used and perhaps a bit strange-sounding) alternative is 'shi die' 师爹.

    Personally, I prefer 'shi zhang'.

Yes, 'shi gong' 师公 is one generation higher.
