If I was asked to describe a Vietnamese delicacy, cha gio (eggrolls) would probably be first, and then com tam (broken rice). I don't like how some people stuff their eggrolls with mostly salad....I mean, eww? I know going vegetarian can be good, but salad and eggrolls do not mix, ever. For me, eggrolls must have crab, taro, meat, mushrooms, and vermicelli, at the least.
I'd love to mention balut as well, but I'd probably be scorned for the rest of my life.
You guys making me hungry talking about all these foods. Balut is that like an egg with a chickling inside??

I have eaten other Vietnamese dishes, but pho (and it must be beef) is still the best. To me, it's not about the noodles. Instead, it's all about the soup. There is just something indescribably appealing about a steaming hot bowl of beef-flavoured soup that is spiced with generous amounts of fresh basil, red chilli strips, sliced purple onions and a squeeze of lime. Yum yum!
I really like Vietnamese food because it's the ELOC of food: Great tasting, but few people know it (compared to Chinese food). I've been exposing Vietnamese to people whenever I have the chance.
But it's not the ELOCest food. Still fewer people have tried Cambodian, Burmese, or Laotian food. Luckily, I have friends from these countries, so I've been able to taste their wonderful, as-exotic-as-their-land dishes.

The soup is good not just because of all that. There is also some dried Chinese herbs used in mixed proportions that makes it smell good, and though every restaurant and cook has a special way of making pho, I'm pretty sure they do use some.
So not only are you a wuxia expert but also a food expert....I like that.

but does anyone happen to know what are the good pho places in San Jose? There are lots of them--so i don't know which ones are the good ones...

Honestly, once I find out that you're not really a guy posing as a girl online, you're free to come over whenever we have pho, which isn't really that often though as the only pho lover in my family is my dad.
I'm not really sure which place has good pho since I rarely eat pho outside....however I've heard a lot about Pho Y #1. Don't ever go there. The broth is salty enough to kill you.

I say all you mainland people's are VERY lucky.
There's not alot of REAL cuisine here in hawaii.

Vietnamese food tend to be a bit healthier but I like Cantonese food better. I have been to non-cantonese chinese restaurant and I don't like the way their food tastes. However, vietnamese food is cheaper. Anyway, I am no longer eat the fish sauce....
Then you're not eating many Vietnamese dishes. It's all about the fish sauce.
