At around what age did Cheung Gwun Bo begin calling himself Cheung 3 Fung, and what inspired him to change his name?

Which was...when? Right after his master, Gok Yeun died? Twenty years later? Forty years later?

One day he saw 3 peaks (sanfeng), and he thought that represented him, so he named himself after that, but changing the "peak" character to the "self-proclaimed" character (since he was self-proclaiming himself to be the peak), while retaining the same pronunciation. This happened some time after he was 24 (exact age undisclosed).

Does this mean that his name isnt really Three-mountain-peaks Zhang, but Three-times-self-proclaimed Zhang?

In Viet, we have no way of knowing what some chinese words means. Like the pronunciation of the word Fung, it could mean wind, peak, riches etc. But Chines has a mean of seperating the meaning, but in Viet the word is phong for all the different meanings. I feel like we are missing a lot.
You do know that it is just fiction, dont you?

If Chinese was written in the roman alphabet without any reference to the pictorial characters, we would have a lot of trouble differentiating the different "Feng" as well. Perhaps you could learn to read Chinese characters with Vietnamese pronunciation, just like my grandmother who would read them in her local dialect, instead of Mandarin. Then, there would be a pictorial reference to words that have the same sounds.

His is an instance of play on word. Literally it means "Three times self-proclaimed Zhang", but the intended meaning is "Three peaks Zhang". So IMO the real meaning is "Self-proclaimed Three Peaks Zhang".

    Quoted from an online source.

    这一番大笑,竟笑出了一位承先启后、继往开来的大宗师。他以自悟的拳理、道家冲虚圆通之道和九阳真经中所载 的内功相发明,创出了辉映后世、照耀千古的武当一派武功。后来北游宝鸣,见到三峰挺秀,卓立云海,于武学又 有所悟,乃自号三丰,那便是中国武学史上不世出的奇人张三丰
Although 3 peaks is mentioned, the "feng" in his chosen name means abundance not self proclamation (自封).
