I don't want to just toss it out. Can I make anything useful with it?
Maybe a buttermilk pancake?
ANything else?

Pancake and crepes are good.
Because I'm somewhere in between,
My love and my agony.
i'll come over and make crepes for you PJ!
Interesting you asked, cause I used buttermilk for the first time last night. Heh. You can make buttermilk fried chicken!! If you're interested I can give you the recipe or you can search for it online. That's what I had for lunch today.
It's a little hard to take at first, but the taste of buttermilk might grow on you (no ARTS, PJ) after a while.
Folks, is buttermilk the same thing as 酸奶 ?

nytimes: Every hr you have 10 minutes where you’re not doing anything productive at work, & you can’t look at porn. So you make a comment & fulfill this desire to show yourself off as a smarty-pants.
Get some decent jam and mix it in to make a fruit drink. The same trick can be used for plain yoghurt.
Jam and dairy products, as long as it's unsalted, works well if the jam is good enough, ie. if it's predominantly fruit-made, with hardly any artificial flavourings. The Bonne Maman range is my preference for good quality, but widely available conserves.
I usually just use a teaspoon, although a chopstick might be even more manoeuvrable. Pour the buttermilk/yoghurt into a large mug, with some space spare at the top to avoid spills, then dollop in a reasonable amount of jam (I go for 1 part jam to 3 parts yoghurt). Then mix. Add milk if you want something thinner, cream if you want something thicker.
Edit: you might want to break up any whole strawberries, or only use the gel parts of the jam, to achieve a more consistent texture and taste.

Hrrrm...wonder what they were thinking back during the 1970s and 1980s then (the "fad" actually dates back to the 1960s, if not earlier, but I wasn't around for the 1960s).
Well, PJ...I recommend just clenching your teeth, holding your nose, and drinking it all. If you can't, then send it to me and *I'll* drink it.
ze buttermilk I picked has the same fat as whole milk.

I just watched Giada on Food Network (Everyday Italian). She made Pancetta Biscuits, using Bisquick mix + buttermilk and then she added pancetta & cheese. Look good. I'd stop there, but she also made cinnamon butter to go on top of the biscuits (I think that'd be weird combination). I might try this but I'll just use regular milk since I don't want to buy & waste a whole bottle of buttermilk just for this.
Go to foodnetwork.com and seach buttermilk, you'll find a lots of kind of recipe there.
// currently sipping fruit buttermilk yogurt courtesy of pannonian's suggestion
next stop: buttermilk custard pie

I made the Buttermilk Custard Pie again last night (first time was a week ago), brought it to a party, and it was a hit! Thanks to blueberry's suggestion to Food Network website, where I found the recipe!
I'm glad I got to make something useful out of buttermilk.
