Chè - or you can call it sweet soup in English - is a traditional Vietnamese sweet beverage, usually served in a glass over ice and eaten with a spoon.

Chè is gelatinous. Varieties of it made with black-eyed peas, jelly, fruit (longan, mango, durian, lychee, …) and coconut cream. Other types are made with salt, seaweed, lotus seed, sesame seed, taro and so on. Chè is cooked in water and sweetened with sugar. In Southern Vietnam, it is often garnish with coconut cream...
