    Default Mushrooms

    Any one out there a fan of mushrooms? Ironically, although I'm Chinese and grew up eating Chinese mushrooms, I have a greater preference for Western mushrooms...particularly those huge Portabello mushrooms that are served at better Italian restaurants. Those could practically be a meal themselves.

    Mushrooms are also great for enhancing the flavor of chili, I find.

    I love mushrooms and also I love portabello paninis. I get at least one a week. A panini and a cup of soup.

    Some people can't stand the flavor/smell of mushrooms, though; I pity them.

    Fried mushrooms are very fattening but are so good. Mushrooms make everything taste so much better in my opinion.

    yes.... mushrooms! i for one will not resist mushrooms in fish, herb, vege or chicken!

    I love mushroom rice, where you cook the rice with a variety of oriental mushrooms.

    Can anyone posts their favourite mushroom dishes with recipes?

    Haha ... I am definitely one of them. I remember when I was young, somebody thought I merely dislike the taste of mushrooms and hid a tiny one along with my favourite curry chicken, hoping that I could "learn" how to eat one. I vomitted.

    Mushrooms and I simply cannot go together. They are one of the reasons why I am hardly thrilled about eating shark fin's soup in chinese restaurants (the other reason being the unnecessary deaths of sharks). Almost all the restaurants I know had mushrooms floating on their soups.

    How can you survive chinese food then?

    Most stir fry stuff have mushrooms in them.

    mushrooms are yummy. i made myself a mushroom omelet for brunch on sunday. the only thing i don't like about them is that you kinda have to pre-cook them or they get really watery. try using fresh mushrooms on pizza. -_-

    I don't know which kinds of stir-fried food you are referring to, but yeah, I cannot survive quite a number of food:

    Dimsum -- I cannot eat the siew mai because of the mushrooms.

    Spaghetti -- I can only eat the homemade kind with mushrooms removed (find it strange? that's what everybody says too... and it happens to be one of my favourites, spaghetti, i mean)

    Chinese New Year Food -- those with mushrooms, I'll just avoid them, no matter how many times people kept chanting "mushrooms bring success!" into my ear.

    Some dumplings -- those with mushroom fillings.

    I'm used to surviving with few choices of food, because many other kinds of food turn me off, too. However, I can force myself to eat those food down by trying hard not to taste them. Mushrooms, somehow, always gave me the feeling of having my stomach squeeze like mad or something.

    yumm.. i absolutely love any type of mushrooms. i think most asian dishes treat mushrooms like side item and not the main entree like westerners do which is why they don't seem as prominent.

    I always wondered if the dried black mushrooms were dried shitaki or portabello.

    some dishes:
    abalone mushrooms stirfried over watercress
    "prince" mushrooms with japanese tofu
    shitaki marinated in mirin in hand rolls
    Black mushrooms and wintermelon soup
    enoki and udon in chicken broth with scallions

    Default Portobello Panini

    Picture and recipe found online at flickr.com posted by sashertootie. I picked this photo and recipe because it looks very similar to the one I eat and the ingredients are all there.

    Portobello Panini

    Oil for brushing
    Portobello mushrooms
    Yellow squash, sliced lengthwise
    Zucchini, sliced lengthwise
    Tomatoes, sliced
    Red onions, sliced
    Red wine vinegar
    Sourdough bread
    Slices provolone cheese
    Basil

    Heat grill. Brush vegetables with oil. Grill mushrooms, squash and zucchini for 2–3 minutes on each side or until well-defined grill marks appear. Place the onions and tomato slices on top of aluminum foil and place it on the grill to prevent them from falling through the grids. In a large mixing bowl, toss all of the grilled vegetables with red wine vinaigrette and allow to marinate for at least 30 minutes. Dress your sandwich in whichever way you like and divide the vegetables evenly. Grill the prepared sandwich for a few minutes on each side until bread is slightly toasted. I used a heavy cast iron skillet to press the sandwich down on the grill. This gives the sandwich ridges and the bread will grill to a perfect crisp on the outside.
