Indivdual Fight scenes? This is so hard because many of these movies have multiple good fights. If we're talking about real actors/martial artists doing their own or at least most of their own with no special effects then the list is in no particular order)

Once Upon a Time in China - Ladder Fight

Once Upon a Time in CHina 2 - Jet vs. White Lotus leader/flunkies

Once Upon a Time in CHina 2 - Jet vs. Donnie endfight

Prodigal Son - Lam Chingying vs. Frankie Chan match

Prodigal Son - Lam Chingying/Yuen Biao vs. assassins

Warriors Two - Leung Gar Yan vs. the villains

Warriors Two - Sammo/Casonova vs. the villains end fight

    Hero - Jet vs. Donnie

8 Diagram Pole fighter - Staff fight scene between Lau Gar Fai and Ko Fei

8 Pole Diagram Fighter - Beginning battle, Yang Family Generals vs. Tartars

Wheels on Meals - Jackie vs. Benny the Jet endfight

Odd Couple - Spear and Sabre vs. Pudao between Sammo and Lau Gar wing and Leung Gar Yan

Magnificent Butcher - Wai Pak/Yuen Biao vs. Yuen Mo/Lam Ching ying

Magnificent Butcher - endfight with Sammo vs. Li Hoi Sang

Pedicab Driver - Sammo vs. Lau Gar Leung

Pedicab Diver - Sammo vs. all the villains fight

Police Story - Jackie in the mall fight

Police Story 2 - Jackie in the factory

Project A - Sammo, Jackie, and Yuen Biao vs. Dick Wei

Drunken Master - Jackie vs. Hwang Jang Lee end fight

Saholin Temple 3 - Jet and the other dude vs. the Qing army

Buddhist Fist - Yuen Shun-yee vs. To Siu-ming(?)

Ong Bak - Tony Jaa in the matches

ONg Bak - the cave fight

    Dragons Forever - End fight

The Victim - Leung Gar Yan vs. Chang yu/ thugs

THe Victim - Sammo/Leung Gar yan vs. thugs

I'd say all of Jackie Chans'
Imo, his are all natural; using all the things around to fight.

    Bruce Lees' too...
and, Andy Lau's last match in A Fighter Blues is also touching.

I would say all Jet Li's fight scenes? I like all his movies and famous ones are Once Upon a Time in China, Fong Sai Yuk, Yi Tien To Lung Kei, Hero, and many many more!

The movie Duel to the Death with Norman Tsui and Damian Lau, also had a classic sword duel at the end of the movie.

The problem is that Jet Li is like doubled all the time especially in the Once Upon a Time in China. I love Sammo and Jackie movies the best. One of my favourite fights is Sammo vs Lau Kar Leung in Peticab Driver. SkineePanda pretty much got all the good ones on his list. I agree with all of them

can anyone tell me if donnie is doubled in any of his films? probably not his latest works but any in his earlier works?

Donnie Yen is doubled for stunts since he is not a stunt guy. Everybody is doubled even guys like Sammo hung, Jackie Chan and Yuen Biao who are awesome at stunts and screen fighting still are doubled at times. Donnie Yen was doubled more when he works for Yuen Wo Ping. Donnie Yen directed or choreographed fights has fewer stunts so he doesn't need doubling a lot but they usually suck. I give Donnie Yen credit for trying new things in choreography but his overuse of undercranking is not my cup of tea.

I don't think I need to mention all the Jet Li/Bruce Lee films cause they all contain amazing fight scenes, but I was suprised when I watched "kung Fu Hustle" that the fight scenes are incredibly entertaining

Yep Yep, i agreed. In Kungfu Hustle, those three guys who were saving the village or should i say town, the last guys who use the wooden pole - not sure if i'm correct - his moves are great and when he attacks the Axe Gang, both sides fought very well.

**I just rmb something very funny, not really related to the topic. During the HK Film Awards, someone actually quoted that to make a good movie like Stephen Chow, one has to learn his way in filming movies, by choosing all the not so good looking ones to act in it. So that Stephen would stand out in the movie. But i think the leader from Axe Gang was real cool. He was the goalkeeper in Shaolin Soccer!
    What's his name anyone knows?

Yes, you're right almo89. I'd to admit that most of them these days had doubled. Now when i think of it, Michelle Yeoh is the only one without doubled so far right? Or she had in the recent years? Coz i used to rmb her earlier shows had no doubled. Like her a great deal in Weng Chun, Cheung San Fung...

Not really. Although the fight scenes were based on CGI, most were done neatly. Especially when Stephen Chou was fighting all those triads at the end of the movie
