Who and provide justification, and maybe a highlight video if you can find a good one. It'd be cool if you can list guys that aren't UFC belt holders as well.
Genki Sudo
He's an exciting fighter. From his entrances to his unorthodox style. He is also a supremely skilled submission grappler. Also he is very respectful of his opponents and all around cool nice guy.

Georges St-Pierre
I didn't want to list UFC champs, but really these are solid guys. I love GSP, his dedication is phenomenal and his natural athleticism was made for fighting. And again, he's an extremely nice and likable guy. But his last fight was kinda disappointing, but he tore his damn groin so I can't blame him.

Lyoto Machida
He flipped everyone on their head. Who says Shotokan doesn't work. I like him all the more now that his punches have knock down power, he's managed to finish his last few fights.
Masakazu Imanari
The king of heel hooks. I think he's probably ended more people's careers than anyone else. Refreshing to see someone base their whole game on one dangerous dangerous technique.

Nate Diaz
I only knew of him recently so I haven't seen any of his fights. But I like his rhythmic striking style. He doesn't look like he hit as hard as all the other guys but they connect and they connect repeatedly. He also submitted Gomi with a freaking gogoplata while losing. How can you not love him, no matter how ugly he is.
