Could you not just buy those instant tofu pudding mixes? They're very fast and simple, so no messing around with getting the mixture ratio right.
I've kind of got it sussed. The soy milk needs to be thicker and the gypsum powder-cornflour mix thinner, so as to make the two closer in consistency. Mix the two by pouring them together, to minimise the amount of disturbing one needs to do to mix them together, as each stir will break down the eventual mixture. Cover the bowl immediately after pouring and leave it for an hour. The mixture is still not exactly smooth, but it sets with a minimum of whey.
